The Hebrew holiday of Passover begins tonight at sunset, as observant Jews around the world sit down for the traditional seder meal. Passover commemorates the deliverance of the Hebrew people from the land of Egypt as described in the Old Testament. For the next seven or eight days, depending on religious interpretation, observant Jews will stick to strict dietary laws, including eating only unleavened bread, or matzo.
